Motivated Monday : Food Prep.


I'm determined to get some abs, I've been killing it in the kitchen and in the gym. The harder I work the more motivated I am. Giving up sugar and alcohol was hard at first, but honestly the longer I stick to it the easier it is - we've had a box of TAG A LONGS in the house and I don't even want one. Not worth it to me right now. 

I've simplified my meals and it's been so great, I think less about food and stress less about what to eat. When I get tired of a meal, I just change it the next week. Planning is 100% necessary no matter your situation, even if you are home every day you need to plan ahead for success. 

I still spend 1-2 hours on a Sunday meal prepping.


I sleep in, get up and drink a cup of coffee while planning our meals. I clean out the fridge and pantry, see what we need, and make a grocery list. 


I swear we spend half our income on food, we eat 95% of our meals at home. I am pretty picky on brands we use, but making a list and sticking to it does help. What does NOT HELP is that the only jerky I love it 15 bucks. I tried the cheaper one, swear, but it sucked so hard.



I made these turkey meatballs last week - EVERYONE loved them so I put them in rotation again this week. Plus they were so easy to make ahead and just heat up with quinoa and tomato sauce for dinner on the go. 


I also have to prep double the chicken because Oliver is all truffle chicken. Still using the Truffle Rub from AllSpice.com  I cook my chicken at 425 with a electric meat thermometer until is says 165 degrees. 


I do not cut it until I use it for my lunch, that way it doesn't dry out.



I made this for dinner on Sunday night - it was fabulous!!! Slow Cooker Buffalo Chicken with Sweet Potato. I'm lazy and did not cook the sweet potato in the oven, that takes way too long, so I peeled and boiled in chucks. Plus it's easier to weigh. The sauce on top is what really makes it, greek yogurt, blue cheese, milk, and vinegar. 


My favorite part of Sunday is around 6:30 when my food prep is done, my kitchen is clean, and I can go take a hot bath and watch Hulu until we go to bed.

  2. Costco has a few different types of Beef Jerky - big bags for $9.99. I get them for my husband. He loves jerky and it saves me a ton with how much of it he eats! lol

  3. That's what I've been doing lately also, been filling my day with more filling/healthy/non-pre-packaged items and I feel so much better! Seriously, like I'll go 4-5 hours between breakfast and lunch during the week and don't even need to break out my snack to tide me over. It's crazy what eating right does for you. :)

  4. It made me chuckle - that your kitchen says HUGE "SUGAR"... when you've kicked the habit - it's almost like the sign is tempting you now ;) I only joke because I'm a huge creature of suggestion. I have nailed the whole30 4 times (almost finished my 5th) giving up sugar, and I do great, and I will ignore it until probably around my period... then it's like MUST HAVE ALL THINGS SUGAR - I've done great quelling that sugar dragon for sure... but the minute I SEE something (insert sugar treat here) I can't get it out of my head - thankfully I've started the whole "Is it worth it." like you said... and "Are you REALLY hungry, or just craving? Are you hungry enough to eat chicken with green beans RIGHT NOW... " if the answer is NO, I don't want it, then guess what it's a craving and I don't need it :)

    1. hahaha, I actually totally forget that sign is up there! agree that the week before shark week is hard, I've done this thing where I keep my protein and carbs in balance at every meal and it helps the cravings so much!

  5. And of course all the comments pointing out how you use photoshop to an extreme because your walls are curved in a way that your house would be condemned are deleted. You are horrible for spewing the lies to people trying hard and can't live up to even your ideal, because you alter photos to an extreme and why? Vanity.

    2. Are you both blind?? Stop being defensive of her for one second. Scroll up to the top picture and LOOK at it. Look at the door. From bottom to top. You don't see it bending?! Then look at the wall to the far left. You don't see that bending as well?? If not, ya'll need to get your eyes checked. I don't care if you adore the woman. Fine. But don't act like you don't see what's obviously right in front of your eyes. Why do I care? Because I can't stand the lying. Just be who you really are! I've seen her on Periscope. She looks fine. Does she look like THIS picture? No. Not at all. So why lie?? It just makes no sense and it makes those who look up to her for real weight-loss inspiration feel bad because they can't progress like Meg....but even SHE doesn't really look this way. Your defending it makes you look silly because the proof is in the picture.

    3. Thank you. THis boggles my mind. I'm sure she doesn't photoshop periscope. BUT THIS PHOTO IS 100% WITHOUT A DOUBT, SCIENTIFICALLY CAN ONLY BE EXPLAINED AS ALTERED. Why defend this? Why defend blatant lying?

    3. How do you guys defend this? Do you not see the walls are curved? That's not caused by anything other than altering the photo. No reflection (unless she has concave mirrors like those sometimes at places for shoplifting) in her bathroom. This is simple science. That's PHOTOSHOP. There's not a single explanation otherwise.

    4. I don't see any walls caving and yes she does look like that on Periscope. What doesn't make sense to me is WHY you two are following her and wasting so much time, energy, and emotion on her.   12. Have you tried food shopping at Aldi? I'm a huge grocery store snob - i'll admit it, but I switched and I'll never go back. I spend HALF of what I did at our local "Gucci Grocery". I live a Whole30 lifestyle and I can always find what I need. As long as you go right when they open, it's easy to navigate.

  14. Megan, have you looked into the ketogenic diet? I follow it as my way of eating and love how I feel along with the results! Also...where'd you get the vinyl on your refrigerator?
