Welcome to dinner, grab you a glass of wine, you'll have the extra carbs after this low carb meal!
Ingredients:
Ground Chicken
Pizza or Italian Seasoning
Onion
Grapes, red seedless + Grapeseed Oil
Egg
Laughing Cow Asiago
Gorgonzola cheese
Parmesan Cheese
Mozzarella Cheese
Mimi just happened to drop off a dozen farm fresh eggs, from those real, legit chickens.
First: Preheat Oven to 450
Weigh your grapes and grapeseed oil before placing on a pan in the oven at 450 for 12 to 15 minutes.
Second: Grab a bowl and mix up the chicken crust.
1 lb chicken - 1 egg - 28g of parmesan cheese - 28g of mozzeralla cheese - pizza seasoning to taste.
Flatten {helps to cook on a Silicone Baking Mat
so it doesn't stick!} and cook at 400 for 10 minutes.
Grapes should be close to done by now.
Pull crust and put on toppings! I spread the laughing cow cheese all over, then added the roasted grapes and sautéed onions, sprinkled with Gorgonzola cheese. Put back in the oven for another 12 minutes - depending on thickness don't over cook or it will become dry.
Check on the children, she's supposed to be cleaning her room, guessing she found her cape and got distracted.
Drizzle with Balsamic Glaze - someone on Periscope recommended and errrrmagwd. Y'all always fix my life! One day I'll get a round pan to make it a pizza shape.

ReplyDeleteOh Laura I have made chicken crust pizza about five times recently and that might work out nicely!!! Great idea!!! :) I don't see why not and it would be nice to change up the texture. I almost always have shredded chicken!!!!!!!!
DeleteI have a similar chicken crust pizza recipe (I'm at work and don't remember the details), but I've played around with the seasonings I add and a ranch packet makes it LEGIT!!!

ReplyDeleteNo, it's thicker! You can make it yourself - you just simmer balsamic vinegar FOREVER, stirring pretty often, until it thickens and turns syrupy. It is one of the most amazing things you will ever taste in your life.
