Riced Cauliflower - 3 Recipes to try!


This is my new favorite item, I am lucky enough to have found it at my local Trader Joe's, so I bought 10 bags because they are always sold out! Now I love this particular one because it is frozen, so it stays good forever, but if you can't find this you can find something similar at Walmart in the produce section or make your own. You would just chop up some cauliflower and pop it in the food processor, but is it just me or do you hate to cut broccoli and cauliflower?? It's so messy!

I thought I would share a few of my favorite ways to use this product.


Chicken 'fried rice'. Sauté the cauliflower in a pan, add in veggies {I used peas}, then make a hole in the middle to cook up some egg, season with salt, pepper, and soy sauce.


I added it to my Trader Joe's Orange Chicken, oh mylanta, so good! 


When you are dieting volume in your food is important, you want things to be low calorie, but tons of food to help keep you full. Hunger pains are the #1 reason I fall off my plan, adding in riced cauliflower to dishes I already make help fill me up. This is the TJ's Sweet Potato gnocchi with chicken, but you could add in regular sweet potato and riced cauliflower! 


I made this last night and will be making it again tomorrow, it's freaking filling and so so so good. I sautéed the cauliflower, added in some Rotel and cilantro then built myself a 'chipotle' bowl topping the riced mixture with roasted corn, black beans, chicken, and laughing cow pepper jack cheese sauce. You don't even miss the rice, at all.

  1. I mash it like its potatoes, some fat free sour cream and cream cheese, I can't believe it's not butter light (or real butter depending on your macros) s&p and voila...you won't even miss potatoes.

  3. I love to put pork chops in the crock pot with either golden mushroom soup and mushrooms OR cream of chicken soup and a ranch dressing mix packet... Add a little water and let it cook all day and then put over cauliflower rice. I also use it in place of rice with pot roast. Its SO good!

  4. I just bought a couple bags after hearing you rave and I loved it! I made cheesy cauliflower rice with laughing cow cheese wedges and I made some buffalo cauliflower bites with it too. Delish!

  5. So I posted on your IG that I couldn't get it at my TJ's. I learned a few things:
    1. It come from Italy. ITALY?!?!? Why can't we source this in the US???
    2. They get in 2 cases at a time.
    3. They put it out at 8 am and it's always sold out by noon.
    4. The guy said "you'd think this stuff was gold".

    Since I live at least 45 min from my TJ's. . . I won't be striking it rich by getting any of this. Totally bummed. I've riced cauliflower once on my own and I hate the mess.

  7. I made my version of a burrito bowl last night. It is amazing. It really, really tastes like rice in these recipes. I can't wait to try an Asian themed meal with it. Personally, the frozen version works better than buying the raw kind or ricing my own cauliflower. I know how to cook and can cook well, but lazy over here. Thanks for all your recipe ideas, you are amazing! Get it girl!

  10. I have not found it at Trader Joe's yet, but have riced it myself a few times. I would use it more, but it makes such a huge mess ALL over my kitchen! I have used it for faux loaded mashed potatoes (I use the recipe from Daisy cottage cheese and it's higher protein) and add shredded Trader Joe's bacon cheddar cheese and green onions. You can make that with regular cooked cauliflower as well and process it. When I made the cauliflower crust pizza, my 10-year-old said it was the best pizza he'd ever had! Also, I've heard that Dole came out with riced cauliflower--don't know if it is fresh or frozen, but that could help those who don't live near Trader Joes.
