Recipe Link Up: Lunches

I struggle with lunches because I tend to find something I like and burn myself out on them {hello, remember #bigasssalads?} then eat out too much before I get sick of spending $10 daily. Lately I've been doing sammies {turkey/ham/wheat bread} but decided to try something new this week.
I'm so glad I did this took me 10 minutes to whip up and pack and I ate it for two days.

If you are saving this to eat later I would actually suggest the single serving rice you can microwave before you eat it. Rice tends to get hard when it's left overnight.

I packed everything separately so it would all be fresh, the tortilla I used was the spinach.

It was yummy, filling, and easy. My trifecta.

I ate them with these goodies I found at Kroger.

Beware: this flavor combo is addictive. I might have finished off that hummus. Hey, it could be worse! Those chips are super light and crispy, not like thick chips which makes them all that much better.
