Drunk Promises and Recipes

During my birthday party last weekend I may have been overly zealous, or drunk, when I told NerkyMeg I would run the Big D Half Marathon with her. This really wouldn't be a big deal except it's in 2 weeks and I haven't been running a whole lot. So despite the fact that I really wanted to not run yesterday I forced myself out the door.

It probably has something to do with staying out until 1am the day before and drinking tequila.


We haven't had a date night in a while, so we headed to Pete's Piano Bar and had a blast! In fact we haven't seen much of each other for about 3 weeks, he had to work a late shift 1-9 for a while, something to do with the time change and Australia, I have no clue, but it sucked. Glad it's over!

Sunday I woke up to rain and hail, but it passed fairly quickly and I headed out for a run.


Most of the reason I signed up was that it's the last half in Dallas before it gets to dang hot out. I was already sweating balls and had to lose my shirt around mile 2, not that it helped my pace was horrible, around a 9:35. I just couldn't get my legs to move any faster, I think they were a little sore from Body Pump on Saturday. Ahhh well, not every run can be amazing, some of them you just have to eek out.

I was in charge of Easter dinner for the family, so I tried 3 new recipes off Pinterest and they were all a hit.


Gluten Free Cheesy Veggie Pasta Bake

This one is made with spaghetti squash, if you are not on that train you need to be, it'd delish! This recipe was so easy I'm putting it in dinner rotation!


Quiona Broccoli Casserole

This was a hit even with the non-veggie lovers in the family.


Cheesy Potatoes

My sister said she wanted these at family dinners instead of my Dad's mashed potatoes, which is a big deal because she LOVES his taters.

You would have thought it was Christmas morning with all the presents Miss M found from the Easter bunny, the joys of being an only child. 3 baskets full of fun!


After dinner it was gorgeous out so we went for a family walk, we used to do these all the time in the summer after our Sunday Family Dinners.


I'm so happy it's finally warming up.


My Mom was in charge of dessert and these are NOT SkinnyMeg approved, but DAMN they are good. {Thanks Pioneer Woman!}


You take a graham cracker put peanut butter on one side marshmallow fluff on the other and another layer with Nutella, then dip it in white chocolate. Yeah, so sinfully delish. I would recommend only dipping half in chocolate other wise it gets too rich, or we can just call that skinny-ing it up :)



Warm weather mean Miss M begging to jump, she says' "please it's so nice outside' haha. How can you deny her?

  7. Looks like you had an awesome Easter! I'm so looking forward to the nice weather that you got to experience! We're trying spaghetti squash for the very first time tonight...my husband is not looking forward to it, but I'm hoping it turns out to be a hit.
