What I Eat {updated}

I get asked all the time what I eat. I already did a post about it here if you want to check it out. It's still mostly true.

Here are a few more of my favorite snacks.

Protein Bites.




Dip with Apples. {so good as a late night treat!}
{ 2 spoon fulls of Greek yogurt, 1 spoon of PB, Chia Seeds, 1 tbl honey, sprinkle of cinnamon}
Add more as needed, I'm not a good measurer.


For Lunches I'm still taking my Big Ass Salads.


I really love this one from Target, minus most of the bbq sauce and the bacon bits.

It can get a little boring eating salad every. single. day. So, I like to mix it up with these products from the health food store.


Now, you KNOW I'm not of fan of frozen prepackaged food. Smart One's are not a meal, but these products are all natural. You can actually read every ingredient!


Plus they taste DELISH, fill me up, and are easy to grab in the morning.

Here are a few of my weekly dinner staples. I'm telling you I find things I like and just make them in rotation, saves me so much time grocery shopping and meal planning!


Spaghetti Squash with chicken sausage and low sugar sauce. 
How I cook my squash: cut in half, scoop out seeds, place face down on foil and cover with more foil, 425 for 30ish minutes. I know you can do it in the microwave I just prefer not to :)


Stuffed Peppers. Cook turkey and quinoa, mix with a little low sugar sauce.
Cut peppers and fill with mix, bake at 425 for 20ish minutes. Can top with some cheese.


Turkey Taco Soup.
Mix all this crap with {cooked} turkey meat.
Your entire family will thank you!

I also have some good stuff on my Pinterest boards. I try to go back and delete shit that sucked.
I'm on the hunt for some easy ways to eat/make sweet potatoes so if you know of something for goodness sake leave me a comment :)


I have exchanged my protein shakes for a Think Thin Bar. They are sugar free and have lots of protein,  I will say they are not for everyone. I personally love the, with Creamy PB being my fav. The nut ones dipped in chocolate are so good, like a candy bar!


I buy mine at Kroger or the health food store, find a location near you here.

Last, if all else fails, chew some damn gum.


I chomp on that crap all day every day.

  2. My fav way to cook sweet potatoes is to slice thin, drizzle with just a little olive oil & add some seasoning. Put them in a foil pouch & cook on the grill for about 15-20 min. DELISH!!!

  5. The BEST way to cook a sweet potato is to wash them, poke holes in them with a fork and wrap them in foil. Bake them at 425 for about 45 minutes. Then turn off the oven and just let them sit for another 45 minutes or until the oven cools mostly. You won't need to add any butter or anything. We usually do them on Sunday and eat during the week!

  7. my favorite way to have sweet potatoes is in the form of baked fries:

    chop them up into little bites, putting them in a big bowl with a little olive oil and seasoning- i go back and forth between 1. italian seasonings, garlic, and onion powder or 2. salt free tony c's

    bake them at 375 for 30-60 min depending on how big your bites are, how many you are making, and how crispy you like them and you have YUMMY HEALTHY fries/cubes

    I will have to post with pics on my blog soon to show you better what I actually do! PLUS gives me an excuse to make them! :)

  10. I roll my sweet potatoes in a tiny bit of EVOO, then roll them in garlic powder. Bake it until it's slightly mushy (no clue how long!). Then I serve it with about a teaspoon of butter, a ton of salsa and a dollop of plain greek yogurt instead of sour cream, and a little salt and pepper to taste. Got it from The Biggest Loser and I'm obsessed! They also added some ground turkey but I haven't felt like that yet. It is SO good!

  11. I roll my sweet potatoes in a bit of EVOO, then coat with garlic powder. Bake until it's done, then serve it with about a teaspoon of light butter, a crap ton of salsa, and a dollop of plain greek yogurt (instead of sour cream), and a bit of salt and pepper. I got the recipe from The Biggest Loser the other night, and they added ground turkey also. It is SO good - definitely a new obsession!!

I baked sweet potatoes for the first time last night and I loved them. rimmed cookie sheet, cover it in foil, oven at 400, clean potatoes and poke holes in them with a fork. put them on the baking sheet and in the oven for 60 minutes. and voila they are done. I did put a little butter on mine with some cinnamon. love. will make again.
    and i to liked the creamy PB think thin bar. I brought another today to eat, the brownie one I think. Thanks for the additional food ideas, I'm going to add them to my rotation.

  13. I bake sweet potatoes on Sunday when I'm doing other food prep for the week. Bake at 375 until they're squishy. Then I wrap them in foil. I either use the taoster oven at work to heat up, or out of the foil and use the microwave. Sometimes I eat them plain. Other times I use them with taco fixings or low salt ham, cheese and onions or I use a few marshmallows with some peanutbutter and honey.

  14. That sounds a lot like my days! Haha! I wish I could cook the same things every week but my husband is too picky for that. (and that is why he cooks a lot of the meals, ha!) I make a pot of that soup and eat it for lunch all week and on the nights I don't want to cook. Love it! I hope your week is going well!

  15. Have you tried cooking your sweet potatoes whole, in the crock pot? I just wrap mine up with aluminum foil, cook them on low for 8 hrs, sprinkle with salt, pepper, and just a tad bit of smart balance spread. DE-lish. they are so fluffy and perfectly cooked when you do them in the crock pot. Plus, you don't have to turn your oven on when you're getting everything else ready for supper.

  16. Have you tried sweet potatoes in the crock pot? just wrap each with foil, cook on low for 8 hrs. season like you would a regular baked potato. Seriously DE-lish! The fluffiest potato I've ever eaten! I also like to make a sweet potato puree with chicken stock, olive oil, and salt and pepper. If I'm feeling really fancy I'll drizzle just a itty bitty amount of maple syrup across the top to add a little more sweetenss.

  18. I had a sweet potato last night. I am the only one in my family who likes them so I only made one. I washed it, stabbed it with a fork 10 times, put it in micorwave for 4 min. cut it open, put a little butter on it and sprinkle some cinnamon. Delish!

  21. I LOVE these sweet potatoes! They take a little time to make so I usually make them on Sunday night then pop them in the microwave throughout the week..which takes no time!

    I usually go less on the shredded cheese to keep them as clean as possible. Sometimes I even leave out the cream cheese altogether if I REALLY want to clean them up. Enjoy! Thanks for all you do!

  23. I cut the sweet potatoes up like fries and bake them at 450 until they look done, about 25-30 minutes, taste test them. After you cut them shake them in a bag with olive oil, garlic salt and pepper, or whatever seasoning you like. sorry this is backwards... i think im ADD... anyhow thanks for sharing your PB dip recipe!

    Very convenient. I keep them in the freezer and just grab a few pucks for my lunch at work. I microwave them for about 1 minute - ready! Enjoy!

  26. I cook sweet potatoes(yams) this way. Scrub them squeaky clean, leave the peel on, cut the ends off and then cut into 2" pieces. Line a 13 x 9 pan with foil and put all pieces in the pan, cut side down so that it looks like pan is filled with orange circles. Cover the pan tightly with foil, poke a few 1/2" holes in the foil. Bake at 350 for 60 to 90 minutes. It all depends on how hot your oven is and if you're baking other things at the same time. After cooked the peel just falls off you can eat 'em or toss 'em. I put a tiny smidge of butter on ea. piece and a really light sprinkle of brown sugar, too. It isn't required for it to taste good, I just like it that way and plan for the calories.

"easy ways to eat/make sweet potatoes" :I just scrub mine then cut into chunks and toss with a little olive oil and seasonings (a local cajun seasoning, garlic powder, onion powder, s&p). bake in the oven on a cookie sheet until done. you can make a big batch on the weekend and eat them a couple times during the week.

  31. Hi! I LOVE the really light colored sweet potatoes. I peel them, wrap them in foil, and throw them on the grill. Turn every 15 minutes until done. Add a little maple syrup and salt and pepper, and maybe a little butter if you want it a bit creamier. So good and easy. I usually make a couple at a time and keep them wrapped in the fridge until I'm ready to eat them.

  33. I started eating the Think Thin bars yesterday and I wasn't crazy about the brownie one, but the Peanut Butter one was good. I will keep trying them. Thanks for the update on what you eat. I just revamped our fridge and cabinets with healthy food :)

  37. I just made Poblano Roasted Sweet Potatoes from the Everyday Paleo cookbook by Sarah Fragoso. I can't find the recipe online, but they're just diced and roasted with a diced poblano pepper and seasoned with cumin and cinnamon. They were delish!

  39. Sweet potatoes: peel them, cut them into medium sized chunks, drizzle with EVOO, salt and fresh ground pepper, and bake them at 325* for about 20-30 mins. They get nice and caramelized, bringing out their natural sweetness, but with the pepper they're not sweet-potato-casserole sweet. Sometimes I sprinkle a Tbsp or two of brown sugar on top. The best part, you can put them in the oven, set a timer, and then do something else while they roast! I also sometimes add in broccoli, bell peppers, mushrooms, or zucchini, and if you throw in some sliced pre-cooked chicken sausages the whole dinner is in one pan :-)

  40. Sweet potatoes! YUM! Well my fave way is getting the ones from walmart you can cook in the microwave, or just bake one, put a bit of mini marshmallows on top, brummel and brown, brown sugar and you are good to go, cinnamon too if you want...its delicious!!!!

  43. I love sweet potatoes!! My fave way is roasting them. Preheat oven to 425. Peel and cube sweet potatoes and put on baking sheet. Drizzle with olive oil and sprinkle a pinch of salt and pepper and rosemary. Bake 10 min, flip and bake another 10 min. Delicious!!! :)

  44. For sweet potatoes, I cut them up, add some olive oil, salt, and cayenne pepper (I like things spicy), and then bake in the oven at 400 degrees for about 30 min (till they get a little crispy). To speed up the process, I will broil at the end for about 5 min or so.

  45. I love your blog! I also love to eat sweet potatoes! I peel and slice them and season with whatever I feel like and a bit of olive oil an bake in the oven at 400 for about 30 minutes. Flipping halfway through.

    I also make sweet potato balls. Peel and slice then boil . Once done mash with goat cheese, spices, Greek yogurt . Dip in egg whites and bread crumbs then bake for 20 mins at 350. My 4 yr old loves helping me make these! You can also add in jalapeños if you like spice!

    And... Right now I have sweet potatoes, eggplant, zucchini and one can dive tomatoes with 2 cups of water in my crockpot for dinner! Healthy and easy! Spice how you like! Hope this helps!

  59. Gum chewing is a life saver! I love roasted sweet potatoes. Olive oil, salt and pepper, bake at 400 for 20-30 minutes, mix halfway through...yum!
